As a woman who grew up in the south, I know many, many recipes for down-home cooking. My family has passed down recipes from generation to generation and they are absolutely delicious. The one problem? Most of them contain a great deal of unhealthy ingredients. That's why I have tried to change around the recipe to make them more healthy for our family. We also include more vegetables with our meals. My youngest son pretty much loves all vegetables, but we have had a harder time with my older son... not to mention my husband who pretty much never ate veggies until I came along.
I'm pretty much always looking for new recipes which incorporate vegetables in fun ways for kids to enjoy. They often help me in the kitchen, too, so the easier the better! I think this is really the best way to get our family eating healthy and making it fun, too. I know I've had a lot more fun in the kitchen trying new things.
Have you heard of The Crock Country Chronicals? This destination site is an amazing place where Moms like us are excited to serve veggies because, just like in our house, they can really be enjoyed even by the pickiest of eaters. You can find great tips for cooking and making healthy meals as well as recipes to make serving veggies fun for the entire family! The Crock Country Chronicle is a great resource for Moms and I'm so glad I discovered it.
In addition, you can find the free Clare Crespo Cookbook on the Crock Country Chronicle. You should definitely check this out because there are some awesome recipes. The recipes show you, step by step, how to create them. They are fun, easy to make and something kids will enjoy. Our family has always, always used Country Crock, so we already know how good veggies taste with them, but do you? My kids love vegetables with Country Crock and did you know 8 out of 10 kids agree that veggies are delicious when served with Country Crock? Yup! It's a must-have for any kitchen and we always have at least one or two tubs in our refrigerator.
We chose a recipe out of the Clare Crespo Cookbook and I started cooking! There are several that I know my kids would enjoy not only helping me make, but helping me eat. I'll definitely be trying more of these in the future. For now, we decided to try the Fall For Them Leaves! Considering the recipe contains some of our favorite veggie, including carrots and sweet potatoes, I thought this would be a real treat for the kids.
Here's a picture of me in the kitchen creating my Fall For Them Leaves masterpiece...
The "leaves", which are the veggies, are cooking in the oven! Here is a picture of the two types of Country Crock always found in our fridge, the Original and with Calcium:
Of course, the boys devoured their treat, as I suspected! They ate so quickly that I couldn't even snap a picture, go figure. Needless to say, they loved them. I know you'll love it, especially when using Country Crock. Yummy!
